Grilled Shrimp Tacos

INGREDIENTS
FOR THE SHRIMP:
- 1 ½ pounds large shrimp, peeled and deveined
- 2-3 tablespoons Fish Taco Spice
- 1 lime
- Olive oil
- Skewers
SOUR CREAM SAUCE:
- ½ cup sour cream
- 1 teaspoon Fish Taco Spice
- Juice of ½ lime
FIXINGS:
- Warm corn or flour tortillas
- Fresh cilantro leaves
- Salsas
- Extra lime wedges
DIRECTIONS:
Shrimp:
- In a bowl toss the shrimp with olive oil and the Fish Taco Spice. Let it marinate for 15-20 minutes. Skewer shrimp.
- Preheat the grill or pan to medium-high heat. Cook shrimp for 2-3 minutes per side, until pink and lightly charred.
- Remove from grill or pan.
Sour Cream Sauce:
- Combine together sour cream, Fish Taco Spice, and lime juice.
- Chill until ready to serve.
Tortillas:
- Warm tortillas on the grill or a dry skillet until pliable with a few golden spots or char.
