Elote Grilled Corn
Makes 6
INGREDIENTS:
- 6 ears of fresh corn
- ‘Rub with Love’ Fish Taco Spice, to taste
- ½ cup Kewpie Mayonnaise, to taste
- 1 cup Crumbed Cotija Cheese
- Kosher Salt, to taste
- Fresh lime, squeeze
DIRECTIONS:
- Remove the husks and silk from the corn.
- Keep as much as the stalk end on the corn.
- Grill corn uncovered for about 10-15 minutes. Making sure to rotate every few minutes.
- Remove corn from grill when all sides have a bit of char to them.
- Plate corn.
- Salt corn and sprinkle with Fish Taco Spice.
- Next, cover with Kewpie Mayonnaise to tate.
- Sprinkle with Cotija Cheese crumbles.
- Finish with a generous squeeze of fresh lime.
